			<content:encoded><![CDATA[<p>“ (&#8230;) Među lombardskim vinima, postoji još jedno o kojemu bih volio što reći: bijeli Domasino, koji se proizvodi u kraju oko grada Como, visoko, prema sjeveru, na desnoj obali jezera. Volio bih, ali ne mogu, jer radi se o vinu koje ne poznajem i jer nikad nisam bio u Domasu: kroz taj sam kraj prošao autom nekoliko puta, kišilo je, nisam se zaustavljao. Srce mi kaže da ne bih bio razočaran. Svejedno, Domasino rado zamišljam upravo ovako: kao vino žudnje, kojemu ni jedno stvarno vino nikad neće biti ravno.“</p>

<p>Ampelio Bucci bio je mozda jedini vinar s kojim je pokojni Edoardo Valentini bio blizak i u koga je, bar tako vjeruje sam Ampelio, imao povjerenja. Valentini je Bucci-ju desetljecima tvrdio da je bacva od 25 hl idealna posuda za odgoj velikog vina, ali mu nikad nije objasnio zasto.</p>

<p>Calabretta je evoluirao unatrag i na Etni je svjetlosnim godinama iza svih ostalih. Tu se na trenutke donekle pribliziti mogu iskljucivo jos Benanti i, rijetko, Salvo Foti. (Cornelissen, po naravi ambiciozan bar kao Sveti Franjo, ali jednostavno prenemiran i prenervozan za onu pravu vinarsku koncentraciju, vec deset godina samo kasni i luta, compiling a history of near misses). A svi ostali mogu da mu popushe.</p>

<p>Opisuje tako prijatelj Scanzi, u svojoj izrazitoj zabavnoj neozbiljno-ozbiljnoj knjizi, susret s velikim patrijarhom Francom Biondi-Santi-jem&#8230; U jednom trenutku razgovor dospije i do pitanja degustacije: - <em>Il riconoscimento dei profumi, la liturgia teatrale cara al degustatore televisivo sono ridimensionati: &#8220;Tutte cose molto soggettive, i profumi. Dipende molto da cosa hai mangiato prima, se hai digerito o no, se sei allegro, se hai litigato con la moglie. Nelle mie degustazioni non mi soffermo quasi mai sul nome da dare ai sentori, i fattori oggettivi discriminanti sono altri&#8221;</em> &#8211; (Andrea Scanzi, Elogio dell&#8217;invecchiamento, Mondadori 2007).</p>
<p>(Ovo bi, naravno, mogao biti koristan naputak svima koji misle da se vina mogu meritorno, &#8220;objektivno&#8221; opisati, da se o vinima iole validno uopce moze govoriti, nabrajanjem pedesetak tzv. deskriptora ili priglupim i restriktivnim tablicama koje propisuju raznorazni kursevi &#8211; mogao bi, kazem, kad bi ti isti imali dovoljno inteligencije, talenta, obrazovanja, koncentracije i poniznosti pred vinom, kad bi ih uopce i zanimalo da se usredotoce, da studiraju, da uce. No, obzirom da na vrbi jos ne radja grozhdje (he he), preostaje mi samo da opet pribjegnem legendarnom Ginu Veronelli-ju koji bi taj nazalost toliko rasprostranjeni tip degustacijske biljeske, poznat i kao &#8220;grocery list&#8221;, navodno cesto znao popratiti sljedecom sarkasticnom i duhovitom primjedbom: &#8220;<em>Sentori di sperma fresco</em>&#8220;.)</p>

<p>U chashi kralj, glavom i bradom, i citav njegov kraljevski bal pod maskama, Biondi-Santi. A u mislima - kreda&#8230;</p>
<p>Neka jedno bude jasno: doista veliki shampanjac najvece je od svih vina. Doista veliki shampanjac ontoloski je razlicit od svih drugih doista velikih vina. Radi se o maestoznom apolonijskom uljezu u carstvu Dioniza. Jedini od svih doista velikih vina ne stvara snovidjenje, vec <em>jasnovid</em>. Jedini od svih doista velikih vina predstavlja izbavljenje od tezhine, od gravitacije, te covjecju misao i duh bar na tren cini slicnijom mishljenju andjela.</p>
<p>Otprilike kao kad Perzej netom odsjecenu zmijonosu glavu Meduze, licem prema zemlji, brizhno polazhe na krevetic od algi, kako joj grubi pijesak ne bi nagrdio mrtvo lice.</p>

<p>Razmishljam o Perzejevim algama, ali i o shumama, o gljivama, razmishljam o smedjem lishchu. Razmishljam o bakru. Razmishljam o humusu, o mirisu zemlje, o svemu sto nice poslije kishe. U pocetku bijashe rijec. Zasto, oche?</p>
<p>Ova je boca Gosset-ovog Quatrieme Centenaire, koji je, nakon 5 godina cuvanja i odgoja, degorzhiran sada vec prilicno davne 1984., sazdana uglavnom od vina iz 1979., ali ga jednako toliko neprestano ozivljava i sirokom rukom zagrabljen miraz zhilave 1971.</p>
<p>Razmishljam o tome da je ovo jedno od onih vina za koja se doista moze reci da je svaki od sitnih mjehurica koji u njemu jos prkose gravitaciji simbol iskupljenja, simbol nade.</p>

Brilla per rarefazione invece che per concentrazione. E’ puro terroir. Concetto astratto, rappresentazione di un’idea, di uno stato della coscienza. Un monumento immateriale che tiene in sé il tutto con grazia eterea. Aromi complessi e gusto interminabile, timbro inconfondibile che riesce a sposarsi con una semplicità antica. L’esperienza sensoriale è così lunga e spontanea che la mia mente comincia a sollevarsi da quel tavolo e si abbandona alle onde della suggestione.</em></p>
<p><em>Ragiono sull’assenza, sul fascino delle ombre &#8211; che sono il presupposto per la luce &#8211; su “quello che non c’è”. Sulla sottrazione che è a volte il mezzo per raggiungere l’equilibrio. Sulla mancanza che è il veicolo del desiderio, di un luogo una persona o il sorso successivo. Penso a quanta bellezza si poggia sulle sottili ma fortissime corde della semplicità e quante cose si possono trovare in una sintesi che riesca a contenere la grandezza di certe creazioni. Si spendono tante parole per poi essere tacitati da un’unica pennellata che le racchiude tutte.</em></p>
<p><em>E’ un grande insegnamento, la sintesi. E’ disciplina dell’autocontrollo e della ricerca dell’essenza.</em></p>

<p>Postoji jedan znacajan vinski pisac koji je ujedno i uvoznik vina, pa svake godine ispisuje katalog koji sadrzi eseje o svakoj od &#8220;njegovih&#8221; vinarija, ukljucujuci i poglavlje posveceno onoj koja mu je od svih najdrazha: iz godine u godinu nam otvoreno priznaje da od ovog potonjeg tezheg zadatka nema. </p>
<p>Mislim da se radi o iskustvu koje je zajednicko velikom broju ljudi, jer je ponekad doista narocito tesko pricati ili pisati upravo o onome sto najvise volis: ne znas odakle bi poceo.</p>

<p>Postoji mnogo razloga da je Stagnum Frane Milosha ne samo najvece crno vino hrvatskog juga, nego i najvece hrvatsko vino uopce. O tome je mnogo toga vec napisano, a puste sam stranice teksta po raznim forumima gdje se raspravljalo o vinu uostalom vec napisao i sam, pa mi nije ovdje ni namjera sve to ponavljati.</p>
<p>Takodjer mi, iako bih mogao, nije ovdje namjera ni Stagnum, kao kontroverzno vino, braniti od svih mogucih eksplicitnih i implicitnih kriticara i kritika koje su se nakupile tijekom godina. Mogu tek reci da s jedne strane naravno postoji, kao i kod svakog drugog vina, objektivno pitanje moguceg nedostatka selektivne sklonosti (Stagnum bi u tom slucaju bio u dobrom drustvu: poprilican je broj velikih i legendarnih svjetskih vina koja su, u najmanju ruku, jednako kontroverzna i, kako se cini, naprosto nisu vina za svacije nepce). S druge sam strane, međutim, uvjeren da velika vecina kako eksplicitnih, tako i implicitnih, kritika potpuno promašuje metu i zapravo zaobilazi bit stvari, i to uglavnom zbog toga što na izrazito <strong>topopoetsko </strong>vino poput Stagnuma iz nerazumijevanja primjenjuje neprikladne kriterije smišljene i rezervirane za sasvim drugi, u apsolutnom duhovnom i kulturnom smislu “manji”, red i tip vina. „<em>Frano seems to be embracing a wine style from the time of his grandfather that strikes me as anachronistic in light of the clean, scientifically driven wines that are possible now</em>”, provali tako -prilicno amblematichno- neki poluanglofoni blogger i ostade živ, saževši pritom samu bit većine formuliranih kritika Stagnuma u navedenu zbunjeno pseudo-progresisticku, duhovno i kulturno karikaturalnu, teško probavljivu rečenicu.</p>

<p>Jedna od kljucnih karakteristika Stagnuma jest to da se radi o vinu koje nedvojbeno i veoma dosljedno odgovara njemackom pojmu <em>identitätsstiftend</em>: vino koje ustanovljuje, afirmira i izrazhava odredjeni konkretni identitet, tj. identitet nekog konkretnog mjesta u njegovoj fizickoj (klimatsko-geoloshke datosti) i duhovnoj (tradicija i kultura) cjelovitosti.</p>
<p>Cesto se govori o Burgundiji kao o primjeru mjesta na kojemu pojam &#8220;terroir&#8221; nalazi svoj najdetaljniji, najizrazitiji, najasniji izricaj. Pojednostavljeno receno, tamo nailazimo na gotovo nesagledivi, visoko kompleksni i naoko manijakalno precizni sistem distinkcija i hijerarhizacije unutar teritorija koji pripadaju pojedinim &#8220;selima&#8221; (razlike medju samim selima smatraju se toliko same po sebi razumljivima i ocitima da se rijetko izricito isticu). Pojednostavljeno receno, potreba za takvom razinom diferencijacije i definicije temelji se na uvjerenju da je unutar pojedinog omedjenog teritorija, kao shireg ambijenta, moguce razlikovati daljnje mikrolokacije od kojih svaka daje vino koje, putem svoje razlicitosti od susjednog &#8220;climat&#8221;, izrazhava, a time potvrdjuje i afirmira, njen zasebni i drukciji karakter.</p>
<p>U svemu je ovome najvaznije shvatiti da taj pluralitet razlicitih &#8220;mikroidentiteta&#8221;, a usporedo s time, naravno, svaki pojedini &#8220;mikroidentitet&#8221; unutar te cijeline zasebno, nije nimalo proizvoljan, niti se, takav kakav nam je poznat u danashnjem obliku, izdiferencirao preko noci. On nije proizashao iz nekog nacelnog vjerovanja  u intrinzicnu vrijednost diverziteta, vec je plod dugotrajnog procesa definiranja na temelju dugotrajne, pazljive opservacije kroz medij kulture (ovo mozda nije losh trenutak da se prisjetimo da sam pojam &#8220;cultura&#8221; u svom prvotnom znacenju prije svega denotira zemljoradnju, a vinogradarstvu je uvijek pripadalo posebno mjesto medju zemljoradinostima). Zna se da su u Burgundiji taj uzgoj, njegu, kao i zacetak samog golemog posla razlikovanja, na sebe preuzeli srednjevjekovni monasi, uglavnom benediktinci i cisterciti, zacevsi time u vrlo velikoj mjeri stvarnost filigranski izdiferenciranog burgundskog vinograda s kakvom se susrecemo danas.</p>
<p>Vino je posrednik i izraz te pojedinacnosti, tog identiteta. Zahvaljujuci vinu, tesko da medju ljudima koji o tome uopce ista znaju postoji netko tko se ne bi slozio da je npr. Clos de Vougeot zasebno i snazno mjesto. Zahvaljujuci posredovanju vina, Clos de Vougeot nije tek proizvoljna lokacija praznog imena, kao uostalom najveci dio povrsine zemaljske kugle,  vec mjesto ispunjeno snaznim znacenjem cije su utjelovljenje vina iz tog obzidanog vinograda. Upravo je emanacija tog &#8220;snaznog znacenja&#8221; ono na sto prije svega mislim kad koristim rijec &#8220;identitet&#8221;.</p>
<p>Uzimam si za pravo uopce govoriti o Stagnumu u tom kontekstu zbog jednostavne cinjenice da se radi o vinu koje, utoliko ukoliko to uopce mogu reci za bilo koje vino, relativno dobro poznajem. Pod time podrazumijevam da sam od berbi izmedju 1993. i 2008., s jedinim izuzetkom 1995., imao prilike kushati i piti bas svaku, vecinu bar nekoliko puta, a neke, sto smatram neobicno velikom privilegijom, cak i razmjerno mnogo puta. Dva su najvazhnija zakljucka koje je iznjedrilo moje iskustvo Stagnuma. Prvi je taj da je svaki Stagnum u najvecoj mogucoj mjeri pravo dijete vlastite berbe, tj. vjeran i nekompromitirani odraz njenih specificnih i jedinstvenih datosti: posljedica je ta da svako godiste Stagnuma ima veoma izrazhen karakter, a godista su medjusobno primjetno razlicita. Drugi je pak zakljucak ono sto nas ovdje posebno zanima: bez obzira na takve veoma primjetne razlike i karakterne amplitude od berbe do berbe, Stagnum je uvijek i u bas svakoj berbi nepogreshivo Stagnum. Negdje u dubokom srcu tog vina postoji jasno prepoznatljivo srediste, mirujuca tocka, lako razaznatljivi nukleus specificnog znacenja koji je neovisan od efemernih varijabli, potpuno fiksan, i jasno prisutan u bas svakoj berbi. Upravo tu fisknu tocku, taj nukleus, prepoznajem kao cvrsti identitet koji opstaje u vrtlogu varijabilnosti koji ga okruzuje (taj je vrtlog ono sto se u anglofonom zhargonu sharmantno naziva &#8220;the vagaries of the vintage&#8221;).</p>
<p>Osobno sam uvjeren da u vinorodnoj Hrvatskoj postoji jos citav niz potencijalno iznimnih terroir-a. Postoji citav niz takvih ocitih kandidata, od kojih neki posjeduju i veoma dugu tradiciju u statusu povlashtenih kolijevki vinogradarstva, a koji, kako mi se cini, jos cekaju onog pravog vinara-babicu koji ce do dostatne mjere dokuciti i njih i sebe, da im omoguci da u punom sjaju kroz vinski izraz ugledaju svijetlo dana kao trajniji identitet. S druge strane, postoji i citav niz onih manje ocitih, koji mozda ne mogu racunati na znacajniji povjesni renome, ali se u zadnje vrijeme sve vise i vise profiliraju i izranjaju kao &#8220;snazna mjesta&#8221; s potencijalno veoma markantnim identitetom, upravo zahvaljujuci radu i talentu nekolicine veoma nadahnutih pojedinaca. Potencijal je, dakle, gotovo nedvojbeno velik, a ohrabrujucih signala posljednjih godina ima, cini se, sve vise i vise.</p>
<p>Rekavsi to, za mene je sasvim nedvojbeno da je upravo zbog svega toga Stagnum, bar za sada, jedini pravi Grand Cru hrvatskog juga nasheg doba. Ni na kojem drugom mjestu nije doslo do toliko sretne i duboke sinergije izmedju iznimno snaznog terroir-a i svetacki usredotocenog, gotovo manijakalno pazhljivog i predanog tumacha. Ne postoji drugo mjesto na kojem se takav izraz snaznog identiteta toliko dosljedno i neumorno, te s toliko inteligencije i tankocutnosti, brusi vec  dvadesetak godina s toliko spektakularnim rezultatima. Stagnum sasvim sigurno nije vino namjenjeno sajmovima, komisijama, kalifima povrshnosti i konzuma koji zbrajaju &#8220;mane&#8221; i &#8220;prednosti&#8221;. Medjutim, Stagnum je -jednako toliko sigurno- vino koje ce ljudi koji citaju veliko mediteransko vino kao pitanje kulture i identiteta, ljudi koji dobro poznaju i razumiju velika mediteranska vina koja inzistiraju na tome da nisu u prvom redu &#8220;proizvod&#8221;, bez ikakvog oklijevanja prigrliti i uvrstiti u to najprobranije drustvo.</p>
<p>Ne Carlo Ferrini, vec Gianfranco Soldera. Ne Diego Planeta, vec Salvo Foti. Ne Angelos Iatridis, vec Nikolaos Foundis. Ne Philippe Cambie, vec Jacques Reynaud.</p>
<p>A tko trazi standardizirani i homologirani &#8221;proizvod&#8221; kojeg ce podvrgnuti jeftino stecenim kriterijima banalne jednoznacnosti, takvom svesrdno savjetujem da ga potrazhi na drugom mjestu.</p>

<p>Jos jedna stvar koja je cesto zajednicka velikim tumachima mjesta (netko je mozda vec primijetio da pojam &#8220;mjesto&#8221; ovdje pokushavam koristiti u smislu koji je analogan nacinu na koji isti pojam koristi veliki teoreticar arhitekture i urbanizma Christian Norberg-Schulz) jest da imaju koncentrirani, sveobuhvatni, gotovo holisticki pristup ambijentu unutar kojeg im ne promice bas nista. Nije ni cudo da Frano Milosh toliko dobro uspijeva izraziti identitet mjesta kad ga vidi i razumije kao cjelinu: cita ga, izmedju ostalog, i kao vrt s ljekovitim biljem, i kao vektor napoleonske staze koja se izvija uz hrbat brda. Niti je slucajno da, npr., Gianfranco Soldera svoj Case Basse vidi, dozivljava i interpretira &#8211; kao hortus conclusus.</p>
<p>Stagnum je dijete odredjene surovosti. Radja ga mjesto koje uglavnom bas i ne odgovara stereotipu blagog mediteranskog raja, vec ga prije obiljezhava stanovita brutalnost. Radi se -posredno- o jednom od razloga da se Stagnum cesto opisuje kao divlje, neukroceno, rustikalno vino. Medjutim, pratiti pojedine berbe Stagnuma kroz godine dozrijevanja znaci svjedociti autenticnoj velicini tog vina u postizanju upravo onoga sto je najvisi, ultimativni cilj i smisao bilo kojeg velikog &#8220;vin de garde&#8221;: ona drevna transformacija tijekom koje sve sto je mrak, vjetar, i kamen postaje svjetlo, shapat, i svila.</p>
<p>Upravo je tako, na primjer, pred nekoliko mjeseci otvoren Stagnum iz 1998., nakon vise od pola sata tupe redukcije i strpljivog cekanja ispunjenog povjerenjem, izronio iz chashe suptilan, prepun niti babljeg ljeta, kromatske topline, zrele i sfericne plazmaticnosti, u obrisima tiho i gotovo njezno vocan, Debussy-jevski, mnogostruk, potpuno neuhvatljiv, i gotovo&#8230; burgundski.</p>
<p>Frano Stagnum vezhe cvrsto - da raste u visinu.</p>

			<content:encoded><![CDATA[<p>Vina Nikse Rokija, poznatog majstora peke iz Pliskog Polja, citav sam niz godina pratio s velikim ocekivanjima, nikad u potpunosti ispunjenima. S jedne strane, i dalje mislim da su njegovi plavci (od bazicnog, preko najnovijeg &#8220;sans soufre&#8221;, do pomalo mitskog Matadura) vina koja nacelno i u samoj impostaciji dosta obecavaju, ali im uvijek nesto nedostaje do iskoraka prema kategoriji iznimnih ili posebno karakternih vina.</p>

<p>S druge pak strane, Roki se kroz posljednjih nekoliko berbi u mojim ochima definitivno potvrdio kao vodeci &#8220;bianchista&#8221; hrvatskog juga. Muskardin (blend Kurteloshke, Kucha i Bugave) i monovarijetalna Bugava prava su remekdjela koja apsolutno nicim ne zaostaju za mnogim po pojedinim parametrima na ovaj ili onaj nacin donekle usporedivim velikim bijelim vinima koja se proizvode drugdje po Europi (od npr. Perret-ovih velikih Condrieu, pa sve do COS-ovog bijelog Pithosa, ili briljantnog Grecanico Dorato pred koji dan preminulog velemajstora Marca de Bartolija). Muskardin i Bugavu karakteriziraju jedrost, punoca i bogatstvo ocito prvorazrednog materijala. Vina mirishu na tamjan, misterij, med, sakrament, ruzhmarin, kadulju, shipak i sunce. U ustima ih odlikuje jednost, harmonicna struktura i intenzivno prisustvo centralnog (za razliku od longitudinalnog) tipa: fantasticna, ravnomjerna difuzija. Ne radi se niposto o &#8220;minimalistickim&#8221; vinima, jer ovdje svega ima u obilju, ali sa savrshenom mjerom i u besprijekornom balansu &#8211; oba se vina, od nosa do sjecanja, dozivljavaju kao prirodne, snazne, nedjeljive cijeline (ἄτομος).</p>
<p>Povrh svega, radi se o blagim, blagotvornim vinima cija pomalo meditativna blagost, uz odsustvo bilo kakvog elementa tenzije, oshtrine ili agresije (ponosno prisutnog kod nekih drugih hrvatskih &#8220;maceriranih&#8221; bijelih vina), ostavlja gotovo ljekovit dojam. (Najsiroj bi se hrvatskoj publici priroda ovog vina mozda najbolje mogla pribliziti sloganom: &#8220;Tizana, ne konjak!&#8221;)</p>
<p>Ovo su velika vina koja valja dekantirati, tociti u brugundske pokale (npr. Spiegelau Authentis), sluziti na sobnoj temperaturi (ili tek koji stupanj rashladjena), te u njima uzivati uz najbolju hranu (raspon mogucnosti za sljubljivanje je doista veoma shirok). Vazno je upravo to da se od njih ocekuje mnogo, te da im se pristupi s povjerenjem, pomalo meditativno, kao autenticno velikim vinima, jer previse rashladjena, previse pozhurena, u premaloj i preuskoj chashi nece pokazati svoje pravo lice.</p>
<p>(Sto uopce reci o odnosu cijene i kvalitete? Raspon cijena za Muskardin je obicno 30-40 kuna, a za Bugavu 50-60 kuna. Muskardin je gotovo najbolji QPR na koji sam ikada igdje u vinskom svijetu naishao: gotovo nadrealno, a za Bugavu se u nacelu moze reci isto. Uzevsi to u obzir, moze se reci da su ova vina nesvakidashnji doprinos ne samo hrvatskoj vinskoj kulturi, vec kulturi uopce.)</p>

<p><em>Hafiz praises wine, roses, maidens, boys, birds, mornings and music to give vent to his immense hilarity and sympathy with every form of beauty and joy; and lays emphasis on these to mark his scorn of sanctimony and base prudence.</em></p>
<p>It is against sanctimony and base prudence that much of my argument is directed, not in order to encourage vice, but in order to show that wine is compatible with virtue. The right way to live is by enjoying one&#8217;s faculties, striving to like and if possible to love one&#8217;s fellows, and also to accept that death is both necessary in itself and a blessed relief to those whom you would otherwise burden. The health fanatics who have poisoned all our natural enjoyments ought, in my view, to be rounded up and locked together in a place where they can bore each other rigid with their futile nostrums for eternal life. The rest of us should live out our days in a chain of linked symposia, in which the catalyst is wine, the means conversation, the goal a serene acceptance of our lot and a determination not to outstay our welcome.</p>

<p>Can&#8217;t seem to string two of them together lately. Thoughts of a dry brain in a dry season. Yet, given the time of year and all, one thing I can still do, even from this ramshackle virtual perch, is to count my blessings.</p>
<p>No big pronouncements to make, no ruminations to disclose. It&#8217;s someone else&#8217;s story that I want to share in lieu of a thank-you note. I first read this with a lump in my throat in a wine forum years ago. I came across it again the other day, this time in print, in Terry Theise&#8217;s deeply life-affirming &#8221;Reading Between the Wines&#8221;. And yes, the lump was back, too.</p>
<p>So, thank you, bunch. You know who you are. I&#8217;m not worthy. Thank you. Here&#8217;s to a lot more.</p>

<p>&#8220;Here&#8217;s a wine with a story. During the decade I lived in Europe, from 1973 to 1983, I became solely and passionately devoted to wine. I promptly became a wine tourist, and one of the first places I visited right away was Burgundy. I lived in Munich, and Burgundy was closer than, say, Bordeaux, plus it was far more interesting and hospitable.</p>
<p>While there, knocking around earnestly (albeit cluelessly), I stumbled across a domaine off the main routes, in a corner of Beaune. I&#8217;ll take a small degree of credit; even as a beginner I knew the wines were special. I bought what I could afford.</p>

<p>I returned a few years later. No appointment. Arrived just as a busload of Belgians was pulling away. The proprietor was doddering through the room consolidating the remains of tasting glasses into a large plastic bucket. &#8220;Ah, he&#8217;ll top up his casks with that,&#8221; I assumed. When all the glasses were emptied, our vigneron placed the bucket on the floor and issued a shrill whistle, whereupon his dog trotted in and proceeded to lap up what must have been several hundred dollars&#8217; worth of premier cru Burgundy. (Somehow I can&#8217;t quite imagine a similar thing taking place in Pauillac&#8230;). This time I had more money and I&#8217;d learned to allocate a lot of my Burgundy budget to this domaine, and so I bought and bought and bought.</p>
<p>And finally the very last of those bottles was being drunk, on New Year&#8217;s Eve 2006. I had shipped it back from Europe along with its companions.</p>

<p>The bottle didn&#8217;t look promising. There were at least three inches of ullage and, let&#8217;s face it, I hadn&#8217;t stored it perfectly. But these wines appeared indestructible, and a couple of months previously another old bottle from the domaine had been wonderful. So once more into the breach. Wine lovers all know the feeling &#8211; the final bottle! You can&#8217;t stand to part with it, and in a strange way you almost want to wait until it&#8217;s past its best; perversely, it&#8217;s less heartbreaking that way.</p>
<p>The color was fine; mature, of course, but not decayed. It needed decanting to separate it from its heavy, gritty sediment, and even after the bottle had been vertical for forty-eight hours, the best I could do was leave an inch in the base. The bouquet of this wine was a force of spirit. If truffles had orgasms, they might emit this fragrance. Soy, sandalwood, shiitake, you know: Burgundy. Like the fat cap on a roast after you&#8217;ve studded it with cloves, sweet and caramelized and bloody. You know: Burgundy!</p>

<p>On the palate, the tannin was durable and unpolished, in the old-fashioned way. Honest, nothing to be ashamed of. The fruit, or its echo, was something that reminded us of how we blow silly things out of proportion. I could try to say what it tasted like, groping for literalisms, but I&#8217;d rather say it made me want to forgive. It melted away the trivial grudges I&#8217;ve clung to. It even said, Next year will be better, next year you&#8217;ll let it go and let the kindness come.</p>
<p>We carved our roast, and my sweetheart and I sat down to dinner. The wine smelled like all the sweetness of the country, like the redeeming kindness of people. Thank you, old Albert Morot, for this Beaune Bressandes, 1969.&#8221;</p>

Dirinchenje je krajnje shkodljivo, i ko to ne priznaje, nesravnjiva je budala, budala na prvi gutljaj, gori je od budaline Kajeta, budalchina budalashka, budala repata, budala storepa, sintaktichka, sinoptichka, sinkretichka, ceremonijalna, univerzitetska, upisana, prvorazredna, vishekratna, cirkularna, nikejska, carigradska, efeska, halkidonska, lateranska, lionska, konstantinska, tridentska, zasluzhna, zabranjena, kozmopolita, bukvalna, sinodska, nakvashena, auroralna, arktichka, mimetichka, nevoljna, maltene trezna.</p>

<p>Nadam se da ovo ne cita ona teta sto &#8220;educira&#8221; nevinu djecicu po germanskim zemljama, jer ovako nesto zacijelo jos nigdje nije procitala, a mogla bi to i prevesti svojim studentima, a onda&#8230; e, tko zna kakav bi pravorijek ta djecica mogla dati o starom chinonskom veseljaku Rabelais-u, he he.</p>
